To prevent blockages, it’s best to remove fats, oils, and grease (FOG) from all utensils, tableware, cookware, pots, and pans before washing. This involves pouring warm oils and liquid fats into a designated receptacle and scraping off any residue and food waste with rubber spatulas. Wipe the utensils clean with paper and dispose of the waste elsewhere. It’s not advisable to rinse the food waste and FOG off with hot water, as this only makes the problem worse. Only after scraping and wiping should any water be used, which should then be drained properly. Kitchen management should establish good practices through training and maintain them through regular checks. More information can be found in the British Water Code of Practice.
Your second line of protection is a kitchen-based mechanical “GRU” (Grease Removal Unit) located under the sink or an externally installed grease separator underground. These systems will require emptying and the frequency will depend on kitchen management practices: the more FOG that goes down the sink, the more maintenance they require and the higher their chance of failure.
After extensive research and product testing, we ultimately selected the GreaseShield as the most efficient and cost-effective grease removal unit (GRU). This unit is designed to fit beneath a single or double sink used for washing pots. It does require regular maintenance from kitchen staff, but this maintenance is crucial to its effectiveness. The front of the unit features a transparent container that visibly collects fats, oils, and grease (FOG). If this container is not regularly emptied, it will overflow and cannot be ignored.
Another option for handling kitchen wastewater is to install an external, underground grease interceptor. This option requires sufficient space and access to tap into the wastewater line before other drains. Traditional interceptors were simple tanks with baffles, but a more effective alternative is the “Trapzilla”, which is better at protecting downstream sewage treatment plants and pump stations. The number of interceptors needed and whether an upstream silt trap is necessary depends on the specific situation and would need to be evaluated. Installing an interceptor does involve some disruption to the property’s exterior, and they must be emptied by an external contractor using a vacuum tanker. While a standard interceptor may be cheaper, it is not as effective as the “Trapzilla” in protecting downstream assets, which is our primary concern.
There are cheaper alternatives available on the Internet, but we don’t provide them as we have found that they are often ineffective. We frequently come across sites with issues that have implemented these solutions.
